Boston’s food scene continues to flourish with new restaurants from Somerville to the Seaport, and the addition of the plant-based, fast casual by CHLOE only adds to the culinary scene. Ahead of by CHLOE’s Seaport opening at 107 Seaport Boulevard on February 23, we spoke with the brand’s Creative Director, Founder, President, and Instagram queen Sam Wasser on her social media philosophy, her fav vegan eats, and why now is the right time to open in Boston.

Your go-to ingredient when you’re cooking?
CAP Beauty Sea Salt
Social media philosophy?
I think it’s important not to take social media too seriously – at the end of the day it should be playful and something you enjoy, not a stressor.
Is there one good filter for instagraming food?
No filters – natural light is always the best filter then I use manual brightness and contrast adjustment to enhance the original photo.
Most instagrammable food at by CHLOE?
Our Quinoa Taco salad looks good in every photo, every time!
Why is now the right now time to open a vegan concept in Boston?
We have been watching Boston for some time now, and the quality of restaurants is already so impressive. We discovered that there were a number of fast-casual concepts coming to Boston. Plus, the NYU community was such a huge factor in the success of our first location in the West Village, we were overwhelmed with the emails we got from our fans that went to different universities in and near Boston asking us when we’d open in Boston. That kind of support meant so much to us, it made us that much more excited to expand to Boston.
What’s the best thing about your job?
No two days are the same. I run around from the office to meetings, to our different locations and I love that I wake up each morning and have something new to look forward to. I also love that I get to do something creative every single day.
What has been your proudest career moment?
When we opened our first by CHLOE on Bleecker Street in July 2015, we were worried no one would show up on the first day. But, coming upstairs to see a line around the block – that was the proudest moment – knowing that people had showed up to stand outside, excited to eat our food! Easily my proudest to date.
Something that you love about Boston that NYC doesn’t have…
The Duck Boat tours!
Where do you enjoy going out in Boston?
Mamaleh’s and Fenway Park. I’ve also really enjoyed wandering around Back Bay.
If you had to choose one: The Guac Burger or the Quinoa Taco Salad?
The Guac Burger! Every time.
If you’re looking to indulge, what do you order at by CHLOE?
The Spicy Thai Salad with a side of Mac & Cheese (extra bacon, duh!)
Which menu item(s) do you recommend for a by CHLOE first-timer?
I would definitely suggest they try one of our burgers – The Classic or The Guac Burger.
Can we expect any healthy takes on park food at the by CHLOE near Fenway?
Our menu overall is fairly healthy since we are a plant-based restaurant but we will definitely have our unique market specials that will rotate highlighting seasonal vegetables and other healthy ingredients.
What gives you design inspiration?
Right now, I’m finding a ton of inspiration from flowers. My favorite thing to do each weekend is wake up and go to the flower market. The different shapes, textures, and colors of each flower are inspiring and I love coming home to create different arrangements to have around my house for the week.
What are your food-related guilty pleasures?
My favorite food indulgence is sushi. I love trying different places, and have a few on my list I hope to check out while I’m in town for the by CHLOE opening.
You’re uber stylish. What are 3 things in your closet you can’t live without?
Morgan Lane bras, Laura Lombardi hoop earrings, Liana tee shirts.
Best place you’ve traveled to?
The Four Seasons Tented Elephant Camp in Thailand was the most magical place I have ever been.
